Onion Confit

I want to eat this with everything right now. It is especially awesome with maple breakfast sausage.

The recipe is here - and as a bonus, it's stupid easy.

I've got a couple huge Vidalias sitting on my counter mocking me, I think I'll try this.

I didn't know that Canada had different shows than the US. I like how the recipe says to get the pork chops with lots of nice fat. I've never seen that on any recipe, though I agree wholeheartedly.
